Pickled Red Onions

I know pickling food isn't exactly new, but it's brand new to me!  Who knew how incredibly easy and delicious it could be? 

See, there's this restaurant that has the best lentil burger in the entire world, and it's so amazingly delicious that it would probably be my final meal (it's sooooo good!).  Tim and I recently tried to make our own lentil burger, and it was actually almost as good as the restaurant version!  So, I needed to step up the condiment game in order to replicate the holy grain meal perfectly.

Enter: marinated red onions. 

Pickled Red Onions
  • 1 red onion, sliced to your desired thickness
  • 1/2 c. apple cider vinegar
  • 1 1/2 tsp kosher salt
  • 1 tbls sugar
  • 1 c. water

In a bowl (I used a Pyrex measuring cup and it worked perfectly) mix together the water, sugar, salt, and vinegar. 
Pour over red onions

...and that's it!  Wait about and hour to eat them, and they should be good for a couple weeks!
