Roasted Veggies

Happy Thursday kids!  I should be posting photos of our brand new desk, but guess what?  I'm not!  It's still not photographed and is currently playing desk to a pile of papers and junk.  As it should be, yes??

In the meantime, I wanted to share with you all a quick and easy way to make some delicious veggies to fill your dinner plate!  Because you're all filling your plate half way up with veggies, right?

Roasted Broccoli and Zucchini
Ingredients
  • Broccoli florets
  • 1-2 zuchini
  • 2 tbsp olive oil
  • salt & pepper
  • pinch of red pepper flakes
  • nutritional yeast, or Parmesan if you prefer
Preheat the oven to 400 degrees
Put all the ingredients minus the nutritional yeast in a Ziploc bag and shake shake shake!  Spread it all out on a cookie sheet and top with nutritional yeast, then roast for 20-30 minutes, depending on your oven and how roasted you like your food

I don't want to brag or anything, but Tim said they were the best veggies he's ever had like eight times during dinner.  I'm betting that Trader Joe's Fake Orange Chicken didn't hurt either :)

Let's Go to the Beach, Each

I'm so glad the sunshine is back in WA!!!  I just love sunshine and the summer- why can't we have more of it??  Oh right, because we live in Seattle.  C'est la vie!

This weekend we had Tim's sister Gina visiting from Idaho!  Her and I went to get mani/pedis
And then we were joined by another old friend of theirs, Tammy..
We grabbed some perogies for dinner...







And then to Brouwer's for some drinks and desert...



Next stop was the Fremont Outdoor Movies, where we all got random pre-written name tags- mine says Evil Manta
Here we met up with a couple more friends- Lindsey, Alex, her cousin Kelly, and another friend Ashley!

I'm embarrassed to say I've never seen Ghostbusters before, but I loved it!!
We made a quick stop at La Isla for some happy hour mojitos and empanadillas
Then on to Golden Gardens to meet some friends for some beach time!

Closeted Desks

Who doesn't love a good closet-turned-desk/nook story?

We started renting a storage unit in our building because we decided to turn our spare room closet into a work station.  We both work from home occasionally (I do more often than him), and as much as I love the fact that I can cuddle on the couch while analyzing data, it's nice to have a big old work surface other than our dining table.

So, a closet desk it is. We have about 5'X2' in there to set up a nice spacious surface, and so that's what we set out to do.  I wanted to build a really simple modual desk with shelves below for baskets, and a couple picture ledges on the wall above. 
The shape will probably end up looking close to this (OK, I actually already built the desk and it's been sitting and waiting to be finished and photographed for weeks!):
I'm excited to finish this project and blog it for you all to see!  I'm even more excited about what we're planning on doing to our entry way closet...;)

Saltwater

Last last weekend (as in not this weekend), Tim and I decided on a spur of the moment trip to the ocean, because, well, I'll let this quote do the talking:
It was clear skies, sunny, and 80 degrees in Seattle when we left, so we were excited to get to the ocean beach and enjoy the rays. 
Road trips are a great way to clear your head.  We've been taking road trips together pretty much since the day we met, so it's our way of relaxing with one another, especially since we don't get to drive that much anymore, living in the city. 
I always forget how much I miss driving.
Well, weren't we surprised when we arrived at the ocean and it was cold as heck, windier than I've ever seen it, covered in clouds?

It was sunny as can be literally until we pulled into the beach town.
We lasted about 10 min before heading back.  Oh well, it was still worth the trip to breathe in that salty air and listen to the soothing sound of the waves.

And then, we sent Bailey out to the ocean :)
