Happy Thursday kids! I should be posting photos of our brand new desk, but guess what? I'm not! It's still not photographed and is currently playing desk to a pile of papers and junk. As it should be, yes??
In the meantime, I wanted to share with you all a quick and easy way to make some delicious veggies to fill your dinner plate! Because you're all filling your plate half way up with veggies, right?
Roasted Broccoli and Zucchini
- Broccoli florets
- 1-2 zuchini
- 2 tbsp olive oil
- salt & pepper
- pinch of red pepper flakes
- nutritional yeast, or Parmesan if you prefer
Preheat the oven to 400 degrees
Put all the ingredients minus the nutritional yeast in a Ziploc bag and shake shake shake! Spread it all out on a cookie sheet and top with nutritional yeast, then roast for 20-30 minutes, depending on your oven and how roasted you like your food

I don't want to brag or anything, but Tim said they were the best veggies he's ever had like eight times during dinner. I'm betting that Trader Joe's Fake Orange Chicken didn't hurt either :)
