Most of the recipes I post to Our Emerald City are actually someone else's recipe that I've tried and wanted to share. In fact, I very rarely actually create my own recipes. But I totally made up this one!
Sweet Potato Lentil Stew
- 4 cups veggie broth
- 1 cup dried lentils
- 1 cup coconut milk
- 1 onion, chopped
- 2 sweet potatoes, chopped
- 1/2 head cabbage, chopped
- 2 cloves garlic, minced
- 1 tsp masala
- 1 tsp tumeric
- 1 inch chunk of ginger, minced
- 1 can fire roasted tomatoes
First, cook the lentils with two cups of broth by bringing the broth to a boil and them simmering for ~10-20 minutes.
Meanwhile, saute the onions, sweet potatoes, cabbage, and garlic until the sweet potatoes are tender.
After the lentils are tender, it's time to start the rest of the stew!
Combine the remaining two cups of broth with one cup of coconut milk in a large soup pot.
Stir in the masala, tumeric, and ginger.
Add the lentils and veggies and stir everything thoroughly. Allow the soup to simmer and cook for another 10-20 minutes until the flavors are wonderfully combined.
Now you're ready to eat! This stew is super packed with nutritious deliciousness. Lentils, sweet potatoes, onions, cabbage, coconut, garlic and ginger are all very good for your body, so you'll be all set for dinner!
