If you love Hawaii, teriyaki, or fresh fruit salsas, then I've got the recipe for you! It's a super simple meal I borrowed /tweaked that's great for dinner or to make ahead for lunch.
- 1 can chickpeas, drained and rinsed
- 1/2 cup teriyaki sauce
- 1-2 cups cooked brown rice
- Mango Salsa (See below)
Now, I wasn't kidding when I said this meal was simple. All you do is pour the chickpeas and sauce into a pan and let sit for about five minutes to absorb the flavor.
Then, cook the beans on medium heat for around ten minutes until the liquid has absorbed.
Pair them with the cooked brown rice and mango salsa (see below) for a yummy meal!
- 1 mango, diced
- Handful of minced red onion
- Juice of one lime
- Handful of chopped basil (salsa usually calls for cilantro but I'm not a big fan and I had basil on hand. It still worked great!)
Now this is where the recipe gets tricky....simply stir all the ingredients together! OK, that wasn't so hard, was it?
Now, to assemble a delicious meal, top a scoop of brown rice with some teriyaki chickpeas and follow with a dollop of mango salsa. Yum yum!
Next time, I might skip the marinating and cooking the chickpeas with the sauce and will probably simple mix it in. Chickpeas absorb flavor like crazy, so after sitting in the fridge all night, they were a little too strong for me! Perhaps eaten straight away they would have been less intense?
