Anyone who loves avocados as well as super fast and healthy meals will love this next recipe. I twisted around Angela's recipe into a bright green dish (mostly because I mis-read the instructions), but it was super yummy! Very creamy and decadent with a bit of tang, and it really took only 15 minutes.
Creamy Avocado Pasta
- 3 garlic cloves
- juice of 1/2 lemon
- 2 tbsp olive oil
- 1 avocado
- 1/4 c kale
- 1/2 tsp sea salt
- lemon zest, pepper, and additional toppings as desired (I used sun dried tomatoes)
First, use a food processor or blender to combine the oil, garlic, and lemon juice until smooth.
Now add in the avocado, kale, and salt, and continue to process until smooth.
Toss that sauce with al dente pasta and top with the lemon zest, pepper, and sin dried tomatoes if desired.
