Kale Pesto

Any normal human is obsessed with pesto.  Because pesto is amaaaaazing!   So delicious, so green, so very wonderful!  Plus, it's packed with nutritious ingredients from leafy greens and nuts.  Traditionally prepared with basil and pine nuts, I found a recipe for a variation using kale and walnuts.
It is sooooo yummy!  The walnuts add the best flavor to pesto!  I highly recommend trying this recipe at least once- it's actually incredibly easy to make!  I won't be dropping an arm and a leg on pre-made pesto ever again!

Kale Pesto
  • 1/2 c walnuts
  • 1 clove minced garlic
  • 1/4 c nutritional yeast
  • 3 c kale
  • 1/2-1 c olive oil
Using a food processor, combine all the ingredients except the olive oil and process.  

Slowly add the oil until the desired consistency has been reached.

That's it!  

I used this pesto to whip up some Pasta Primovera, a favorite of mine and Tim's.  I forgot to buy sundried tomatoes though.  Boo :(  Good thing I had some extra delicious pesto to pump me up!
