Today's lunch came with a side of yummy salad a la mason jar! Greek salads are my favorite :)
I beef them up a little by adding protein packed chickpeas.
Grab some romaine lettuce, cucumber, red onion, olive, and garbanzo beans/chickpeas.
Start by mixing up some balsamic vinegar and olive oil. I like mine vinegary so it's about a 1:1 ratio in my dressing. Then I add a big pinch of dried basil because basil is fantastic!
Then assemble the jars starting with the dressing and ending with the romaine lettuce, making sure none of the leaves touch the sauce!
