I have a bunch of have written posts waiting to add pictures to, but I've been too busy to take any pictures lately! Luckily, I have a couple recipe's worth of pictures ready to go!  

Today's fast and easy vegan fare gets to make friends with my favorite pals, mason jars!
A friend posted a link on Facebook about making salads in mason jars and I had one of those "duh, why didn't I think of that?" moments!  I also found this great blog that has a bunch of yummy salad ideas! 

The basic idea is that you can put dressing in the bottom of the jar, and as long as it doesn't touch the greens, the salad will stay fresh for four days!  When I thought about it, most salad ingredients are pretty crunch and could withstand being in dressing for a couple days.   Then you can just shake the jar up to eat- so easy for lunch time!

Tim and I have been eating these mason jar salads for a couple weeks now and I can tell you, they're a hit!  Here is what I generally put in all my salads:
  • Romaine/Spinach mix
  • Chickpeas
  • Almonds, slivered 
  • Carrots
  • Bell pepper 
  • Mushrooms
  • Red Onion
  • Balsamic Vinegar with dried basil added
Obviously you can mix and match salad ingredients however you like them!  Maybe I'll even try to switch up my salad routine a little bit!  Spinach, walnut, strawberry salad maybe?

  4. I love this idea! I plan to try this soon be ause I have been wanting salads everyday but the stuff goes bad before I eat it. This would give me nicely portioned meals
