Roasted Chickpea Tacos

I don't know about you, but I looooove Mexican food!  I usually eat it at least once a week, and like to go all out making taco-flavored rice and the works.  So when I came across this simple recipe from Mama Pea for chickpea tacos, I had to try it out!
Roasted Chickpea Tacos
Ingredients
  • 2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1 1/2 tsp ground cumin
  • 1 tsp sea salt
  • 1 tbls lime juice
  • 2 tbls water
  • One can chickpeas, rinsed and drained
  • Taco shells (we used corn tortillas fried in oil for a few seconds)
  • Taco trimmings (I used shredded romaine lettuce, black olives, corn and red onion)
Preheat the oven to 375 degrees, then all you do is combine all the ingredients down to the water, and marinate the chickpeas in the mixture for 30 minutes or longer (we didn't marinate this long and they were fine).  Roast the chickpeas for 20-30 minutes, assemble your tacos, and enjoy!

  1. We had this last night! I think your flat tortillas would work way better then the taco shells we used because the chickpeas rolled off. Also the corn is a good extra!
