Sloppy Joe's

If any of you grew up like me, then you love Sloppy Joe's!  And just because I'm vegan doesn't mean I have to miss out on all the fun!  This following recipe was adapted from Lindsay's recipe.
  • 1 cup uncooked lentils
  • 4 cups water
  • 1 tbls olive oil
  • 1 diced onion
  • 1 diced red bell pepper
  • 2 cloves minced garlic
  • 1.5 tbls chili powder
  • 1/8 tsp paprika
  • 2 tbls oregano
  • 1 can tomato paste
  • 1/2 cup tomato sauce
  • 1.5 tbls mustard
  • 1 tsp sugar
  • red pepper flakes and cayenne pepper to taste
  • hamburger buns
  • Earth Balance vegan butter
The first thing to do is to prepare the lentils.  Combine the water in lentils in a pot, bring to boil, then simmer for about 20 minutes.

Meanwhile, saute the onion and red pepper for a few minutes until soft.
Add in the lentil and the rest of the ingredients and continue cooking.
When the lentil mixture seems almost done, butter the buns and toast in the oven.
The lentils and spices should be congregating nicely by now.  When it's all cooked to your tastes, pile on a bun!
